How to make golden pancakes step by step
Here we go to what matters. Follow these steps and you will see that there is no mystery. Yes, calm and low heat. Therein lies the key.
1. Mix the wet ingredients
In a large bowl, whisk the egg together with the yogurt, honey (or maple syrup) and vanilla. Do it willingly, but without overdoing it. When everything is well incorporated, we are already on the right track.
This step defines much of the final texture, so don’t do it in a hurry.
2. Add the dry ingredients
Now the flour, sugar, baking powder and pinch of salt enter. Mix everything with a whisk or a large spoon.
Here is a very homemade tip: mix just until you don’t see large lumps. If you keep stirring non-stop, the dough loses its grace. And this is noticed later in the frying pan.
3. Let the dough rest
This step a lot of people skip… And then what happens happens. Let the dough sit for about 5 minutes. No more, no less.
During this time, the baking powder does its job and the dough takes shape. Thanks to this, the pancakes come out taller and fluffier. It’s worth the wait, really.
4. Cook the pancakes
Place a non-stick skillet over low heat. If you want, rub a little butter or oil with a paper towel, just what you need.
Pour a portion of batter into the center. Do not spread it. Let it fall and she settles down herself.
When bubbles start to appear on the surface, it’s time to flip it over. Do it carefully and cook on the other side until nicely browned.
That golden color is the sign. Neither white nor dark. Beautiful golden.
5. Serve and enjoy
Stack the pancakes on top of each other and accompany them as you like: honey, fresh fruit, butter, syrup… Here you feel free.
At home we usually start with fruit and end with something more greedy. Well, sometimes we go straight to the sweet tooth, I’m not going to lie.
Tips to make them perfect
After making this recipe many times, I leave you with some tips that always help:
- Low heat: if the pan is too hot, brown too quickly on the outside
- Don’t flatten the dough: leave it alone in the pan
- Don’t turn a thousand times: one turn is enough
- The first batch usually fails: it’s normal, the pan is adjusting
With these details, the pancakes come out much more uniform.
Ideas to accompany your golden pancakes
Here comes the fun part. Golden pancakes go with almost anything.
Some ideas that never fail:
- Sliced banana and honey
- Strawberries with yogurt
- Butter and sugar
- Berries and a little chocolate
- Whipped cream for special days
In Brazil, we see more and more the mixture of sweet with a salty touch. A little butter with honey is amazing, I’ll tell you in advance.
